The Departure: Montagne Sainte-Victoire
Adjacent to the cheery city of Aix-en-Provence, the Montagne Sainte-Victoire lies in a region known for its 300 days of sunshine per year. Make the climb up this stunning mountain, immortalized by Cézanne in many of his paintings.
Before reaching the top, look for the small 17th-century chapel hiding in the rock face, inside which there’s a guestbook for climbers to sign their names in as proof of (almost) reaching the finish line. 
Hopefully somebody remembered to stop by the Aixoise open-air markets beforehand, because upon arriving at the summit, the the only thing better than reveling in the accomplishment is doing so with a baguette in hand and a spread of chèvre, saucission (cured sausage), and some of the best cheese in the world set down nearby.
